The 90'a and beginning of new millennium

Bistros in Gdynia, development of western fast-food bars as well as beginning of the fashion for healthy eating after 1989, which was a crucial date for Poland, most of gastronomic outlets in Gdynia were closed since  socialist relicts simply did not manage to withstand free market competition. However, their place was immediately taken over by new restaurants, bars and bistros. Gdynia bistros constitute an important chapter in the history of gastronomy not only in the Trójmiasto area, but also of the entire Poland. Their form is still evolving in Gdynia and they have been experiencing their second youth for several years now.
Oldest bistros in Gdynia are the extremely popular "Kwadrans" at Skwer Kościuszki, a little bit forgotten Bar-Pizzeria AMD in Abraham Street (which has been serving the first in the Trójmiasto area thin pizza crust since 1991) and Bistro "Anker" located close to the City Hall in Gdynia. Only last year there were some interesting bistros opened such as a retro style "Anatol" or "Przystanek". Their character, something in between a bar and a restaurant, is especially enjoyed by busy white collar workers from the centre of Gdynia.
Gdynia, alike all other big cities in Poland, was not passed over by the expansion of chains of western fast-food bars. One of the first such places was Pizza Hut opened close to a very popular Gdynia cinema called "Warszawa" which no longer exists.

Fashion for "healthy" vegetarian food

An important culinary episode in the history of Gdynia is a trend for healthy eating, including vegetarian cuisine. The main advocate and popularizer of this phenomenon in Poland was a chain of bars called "Green Way" which was created in Gdynia in 1997. One of the first and exemplary spots of the well-known and popular in Poland chain was opened in Abraham Street and still exists today.
Next step aimed at promoting the so called healthy food are shops which offer organic, ecological and traditional food products which are developed under the brand name "Bio Market" and also include an on-line shop. Recently, bakeries called "Bio Piekarnia" offering high quality products backed without artificial enhancers and made from flour from organic grains from ecological farms have been really successful. Now, we are waiting for the first "BIO restaurant" to open its doors in Gdynia.

Development of ethnic cuisine

End of the 90's as well as the beginning of the new millennium brought about full bloom of restaurants of ethnic character. Italian restaurants (La Vita, Da Vinci, La Gondola), Indian Taj Mahal, Mexican Pueblo and Chinese Moon were opened in Gdynia. Also Greek restaurants arrived to the city relatively soon, first Santorini, later El Greco. It has been several years now that you can also dine in an excellent French restaurant Petit Paris or the Thai Thai Hut. Both last and this year have been marked by opening Japanese restaurants which offer primarily the still more and more popular in Poland sushi. Gdynia has not been passed over by the fashion for fusion cuisine which can be found among others in Trafik and Charlie.
